Your friendly host will teach you all about traditional Apulian cuisine, showing you how to use seasonal ingredients to prepare recipes for regional delicacies which have been handed down through generations of Italian women since ancient times. You’ll then enjoy your creations for lunch.

This afternoon, you’ll head into the Grotte di Castellana for an immersive adventure through the incredible natural rooms of an unlit cave. During this extraordinary excursion guided by speleologists (cave experts), you’ll listen to the sounds of the cave and discover the life populating it as you have the chance to explore alone. This amazing experience ends with a delicious traditional dinner at the nearby Osteria del Caroseno.

Today you’ll discover Puglia from a new perspective, as you take to the skies in an Apulian ultralight aircraft. Apulia is home to a thriving aerospace industry and this unique aircraft, featuring a frame made of high performing carbon fibre, was launched by pioneering local brand Blackshape. Taking off from San Pietro Vernotico, your professional pilot will send you soaring over the Italian landscapes during a thrilling 45-minute adventure.

After working up an appetite in the air, you’ll return to Borgo Egnazia for a cooking class in the resort’s acclaimed cookery school, Trattoria Mia Cucina. Choose from a range of classes, including preparing a typical Apulian lunch with meatballs and ricotta cheesecake; making fresh homemade pasta such as orecchiette and cavatelli; or creating your very own focaccia. Following the lesson, you’ll sit down to feast on the fruits of your labour.

Following a fun-packed couple of days, this morning it’s time to relax with a visit to Vair Spa, Borgo Egnazia’s award-winning wellness sanctuary. Here you’ll unwind with a heavenly two-hour Annaskè body treatment; a restorative aromatherapy journey that begins with a soothing scrub followed by a blissful massage using pure essential oils.

Fully rejuvenated, it’s time to uncover Puglia’s wine heritage during a tour of a local family-run winery nestled in the region’s rolling countryside. Here you’ll learn all about the roots and traditions of Apulian winemaking on a tour of the vineyards and cellar, before sampling some of the area’s most delicious wines during a private tasting experience. Tonight is your final night in your villa before flying back home by private jet in the morning.
