Guests can enjoy fine dining beneath the Venetian glass chandeliers of Ristorante Tosca, which serves exceptional Tuscan cuisine including homemade pasta, locally sourced meat, fresh seafood and estate-grown extra virgin olive oil. A sommelier is on-hand to pair fine wines with every course. Pazzia specialises in hand-tossed thin-crust pizzas, along with delicious antipasti and salads made using fresh home-grown produce. Aperitifs and post-dinner drinks can be enjoyed overlooking the pool at Bar Visconti, named after Italian filmmaker Luchino Visconti who once owned the castello.

Housed in the estate’s former wine cellar with dramatic barrel-vaulted ceilings and restored stone walls, Essere Spa offers a range of indulgent European treatments and even makes its own organic beauty products, which guests can recreate during a workshop. There’s also a heated outdoor pool (open seasonally), saunas and steam rooms. Active types can work-out at the fully-equipped fitness centre, take yoga classes in the scenic vineyards and hike or cycle along endless trails, while gourmands can learn new tricks at pizza-making and mixology classes.

Castello di Casole boasts 41 luxurious suites within the castle and surrounding villas, painstakingly restored in a country-house style with wood-beamed ceilings, stone walls and hand-plastered finishes. Two-storey Limonaia Suites occupy the converted lemon barn – each boasts a cosy upstairs living area, while downstairs you’ll find a cosy master bedroom with custom-made bed, large modern ensuite bathroom and private outdoor garden terrace.
